Recipe | Arroz con Gandules

Ingredients

  • 1-15 oz Can of Gandules/pigeon peas
  • Handful of diced ham (Hormel)
  • Condiments:
  • 1 tsp Adobo-Goya
  • 1/2 cup Sofrito-Goya or your own homemade
  • 1/2 cup Spanish olives
  • 4 oz Tomato sauce
  • 2 cups White rice, long-grain (set aside)
  • 1/4 cup Vegetable oil
  • 2 cups Water
  • 2 teaspoons sazon
  • Salt (to taste)

 

Directions

  1. In a deep pot add oil, ham, sofrito, adobo, Spanish olives, Sazon (con cilantro y achiote) and tomato sauce
  2. Let cook for a bit on medium heat (keep stirring so it does not burn or stick to the bottom of the pot)
  3. Add 2 cups of rice, 2 cups of water, and salt to taste
  4. Let the rice cook on medium heat until water is gone, then stir rice and cover pot, turn heat down to low
  5. Check occasionally and make sure rice is fully cooked

The Story

This is almost every Puerto Rican’s favorite Christmas dishes. I make this and grew up eating it not only for Christmas but throughout the year.
