Recipe | Arroz con Gandules
Ingredients
- 1-15 oz Can of Gandules/pigeon peas
- Handful of diced ham (Hormel)
- Condiments:
- 1 tsp Adobo-Goya
- 1/2 cup Sofrito-Goya or your own homemade
- 1/2 cup Spanish olives
- 4 oz Tomato sauce
- 2 cups White rice, long-grain (set aside)
- 1/4 cup Vegetable oil
- 2 cups Water
- 2 teaspoons sazon
- Salt (to taste)
Directions
- In a deep pot add oil, ham, sofrito, adobo, Spanish olives, Sazon (con cilantro y achiote) and tomato sauce
- Let cook for a bit on medium heat (keep stirring so it does not burn or stick to the bottom of the pot)
- Add 2 cups of rice, 2 cups of water, and salt to taste
- Let the rice cook on medium heat until water is gone, then stir rice and cover pot, turn heat down to low
- Check occasionally and make sure rice is fully cooked
The Story
This is almost every Puerto Rican’s favorite Christmas dishes. I make this and grew up eating it not only for Christmas but throughout the year.
